I prefer food that is gentle on the stomach and healthy. While most healthy foods around the world are often bland and not always pleasing to the palate, I’ve come to appreciate their benefits after spending the first couple of decades of my life indulging in unhealthy junk food. Nowadays, I lean towards a more health-conscious menu. I prefer easy-to-cook, mildly spiced Indian dishes. My favorites are khichdi and curd rice, both simple to make and gentle on the system. For special occasions like festivals or anniversaries, I enjoy a traditional spread of rice, chapati, and a couple of vegetarian dishes. At home, we embrace a democratic approach to food choices. I am an ovo-vegetarian, my wife is a strictly vegetarian, and our son enjoys non-vegetarian food.

My favorite recipe

My favorite recipe is khichdi.  It is an easily digestible dish made with rice and lentils. Popular all over south Asia it has various versions of lentils being added to it. It is one of the first solid foods we are fed during our pre – toddler phase. Maybe that is why it remains a favorite food throughout life. The cooking process – my method is extremely simple.This would be for one person. I would take a small glass and fill it half with rice and the other half with lentils. First wash it three times. I am not sure why it has to be three times but my wife said so and that is what it is. Next put the washed rice and lentil in a cooker, pour water as required.
