My favorite recipe is khichdi. It is an easily digestible dish made with rice and lentils. Popular all over south Asia it has various versions of lentils being added to it. It is one of the first solid foods we are fed during our pre – toddler phase. Maybe that is why it remains a favorite food throughout life.
The cooking process – my method is extremely simple.This would be for one person. I would take a small glass and fill it half with rice and the other half with lentils. First wash it three times. I am not sure why it has to be three times but my wife said so and that is what it is. Next put the washed rice and lentil in a cooker, pour water as required. The trick a friend of mine once told me – this is with basmati rice – the water should be an inch above the level of the rice . Add salt to taste and just a pinch of asafoetida. Pressure cook it till the rice cooks. That is it once it cools down I add some pepper power and swallow it down trying not to burn my throat.
There are better and more civilized ways of cooking it like adding vegetables or soya chunks. All said and done it is filling, nutritious and super fast to cook especially when you are pressed for time.
